What You’ll Need

  • 1 Texas red grapefruit
  • ⅔ cup of plain or vanilla Greek yogurt
  • 2 tablespoons of granola
  • 1 teaspoon of honey

How To Make It

  1. Peel and segment your grapefruit, removing as much of the white pith as possible without cutting into the fruit. Chop segments into small pieces.
  2. Spoon half of your yogurt into the bottom of a glass and add some grapefruit pieces on top.
  3. Spoon in the remaining half of your yogurt and top with the remaining grapefruit.
  4. Sprinkle on your granola and drizzle with honey.

Getting Your Protein: Pan-Roasted Grapefruit Chicken

So, you’ve gotten in some dairy with your grapefruit parfait, now it’s time to take care of your protein. This yummy pan-roasted grapefruit chicken is both delicious and healthy, making it the perfect addition to your grapefruit diet.

What You’ll Need

  • 1 Texas red grapefruit
  • 4 chicken thighs with bones and skin
  • 2 tablespoons of heavy cream
  • 1 tablespoon of honey
  • ⅛ cup of white wine
  • 5 ounces of diced pancetta
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ⅛ cup of pomegranate seeds

How To Make It

  1. Preheat your oven to 400 degrees.
  2. Spread salt and pepper over your chicken thighs.
  3. Add pancetta to a skillet on medium heat and cook for about 3 to 4 minutes or until golden brown. Remove the pancetta.
  4. Add your chicken thighs, skin-side down, to your skillet over low heat and cook for 10 minutes.
  5. Cut all peel and pith away from the outside of your grapefruit. Supreme your grapefruit by cutting the centers of the segments out of their pithy skin in wedges. You can look up easy guides to supreme a grapefruit.
  6. Flip your thighs to skin-side up. Add the pancetta, cream, grapefruit, and white wine and remove from heat.
  7. Place your skillet in the preheated oven for 20 minutes.
  8. Remove from the oven and evenly drizzle with honey. Cook again until the internal temperature reaches 160 degrees, about 10 minutes.
  9. Use pomegranate seeds as garnish and serve.
