Ingredients You’ll Need

  • ½ pound salmon
  • 1 medium avocado, sliced into wedges

  • Thinly sliced radishes
  • Sea salt and ground black pepper
  • Lime-poblano vinaigrette
  • Handful of pea shoots (optional)

Ingredients for the Dressing

  • ¼ cup lime juice (for dressing)
  • 1 large poblano
  • 2 tbsp cilantro, chopped
  • 3 tbsp Greek yogurt
  • Sea salt and ground black pepper
  • ¼ cups of olive oil plus extra as needed


  1. Roast the pepper either over a gas burner, roasted on a grill, or put under a boiler to char all sides.
  2. Leave it for 10 minutes to cool.
  3. Season the salmon with salt and pepper.
  4. Heat a tablespoon of oil in a nonstick pan over medium-high heat, then add the salmon skin side down.
  5. Cook for 4 minutes then flip and cook for about 3 minutes until it is medium rare.
  6. Take the charred poblano and use a chef’s knife to peel away the blackened skin. 
  7. Core and seed the pepper before roughly chopping.
  8. Add the pepper, lime juice, yogurt, garlic, and cilantro to the blender and process until smooth.
  9. Leave the blender running while you slowly stream in the olive oil. Slowly add more oil until it reaches the desired consistency.
  10. Season with salt and pepper to taste.
  11. Toss the greens with the prepared dressing, reserving some dressing.
  12. Layer the greens with the Rio red grapefruit segments, avocado, radish, and the cooked salmon.
  13. Sprinkle on the pumpkin seeds and drizzle with the reserved dressing along with salt and pepper.
  14. Serve immediately.

Chia Seed Pudding With Rio Red Grapefruit and Ginger

  • 6-7 tbsp of chia seeds

  • ½ cup of canned full-fat coconut milk
  • 2 large Rio red grapefruits, cut into sections
  • ¼ cup unsweetened flaked coconut, toasted
  • 1 tsp vanilla extract
  • 1-3 tsp of pure maple syrup, to reach desired sweetness


  1. In a large bowl or jar, mix together the coconut milk, your choice of milk, ginger, maple syrup, vanilla, and chia seeds.
  2. Cover and leave it in the refrigerator for at least 2 hours to thicken, mixing it again occasionally. If it is still too thin after 2 hours, add a tablespoon of more chia seeds in intervals of 30 minutes until it’s the right consistency.
  3. Dish out the pudding into individual servings before topping it with healthy grapefruit and some toasted coconut immediately before serving.

Rio Red Grapefruit, Pineapple, and Ginger Smoothie
