Grapefruit season is here, and at Winter Sweetz, we are celebrating the start of a brand new season by peeling out some delectable segmentz and thinking about all the diverse uses these little bundles of sweetness can offer.
Today, we’re going to explore three delicious fall grapefruit cake recipes that you and your loved ones can whip up and enjoy!
The Brown Derby Grapefruit Cake
This classic cake derives from the popular comfort food chain restaurant, The Brown Derby, and was a culinary staple in Los Angeles several decades ago.
Here’s what you’ll need for the grapefruit cake:
- 1 ½ cups of all-purpose flour
- ¾ cup of sugar
- 3 eggs (separate yolks and whites)
- ½ teaspoon of salt
- 1 ½ teaspoon of baking powder
- ¼ cup of water
- ½ teaspoon grated lemon zest
- ½ teaspoon cream of tartar
- ¼ cup of vegetable oil
- 3 tablespoons of grapefruit juice
For the grapefruit cream cheese frosting, gather:
- 2 packages of cream cheese (each 6 oz)
- 2 teaspoons of lemon juice
- 1 teaspoon of lemon zest
- ¾ cup of powdered sugar
- 1 lb of fresh grapefruit segments
Here’s what to do:
- To start the cake, grab a mixing bowl. Add the flour, baking powder, sugar, and salt for the cake through a sifter.
- Then make a well in the center of the dry ingredients and add the oil, grapefruit juice, egg yolks, and lemon zest. Mix until mixture is smooth.
- In a separate bowl, add in the cream of tartar and egg whites until mixture is stiff.
- Next, gradually pour first mixture over the egg whites and cream of tartar mixture. Fold gently with a spatula and do not stir.
- Pour batter into an ungreased pan.
- Bake cake at 350 for 30 minutes.
And now, the frosting:
- Allow cream cheese to soften until room temperature and then beat cheese until smooth.
- Add lemon juice and zest to cream cheese
- Slowly blend in powdered sugar and mix until smoothly blended.
- Crush grapefruit sections and blend 2 teaspoons worth into frosting.
- Spread frosting on the cake and garnish top and sides with grapefruit pieces.

Gather these ingredients for the cake:
- 1 ½ cups of flour
- 3 large eggs
- 2 teaspoons of baking powder
- 1 cup of plain yogurt
- ¼ teaspoon of salt
- ⅓ cup of sugar, stevia or Splenda
- ¼ cup of honey or agave nectar
- 5 tablespoons of grapefruit zest
- ¼ cup of canola oil or coconut oil
- ½ teaspoon of vanilla extract
What you will need for the glaze:
- ½ cup of powdered sugar
- Grapefruit wheels
- 2-3 teaspoons of grapefruit juice
- Fresh mint leaves (optional)
Now here’s what we do:
- Preheat oven to 350 degrees.
- Whisk together dry ingredients flour, salt, and baking powder.
- In a separate bowl, combine wet ingredients and mix.
- Slowly add dry ingredient mixture into wet ingredients and stir until smooth.
- Pour into a greased baking pan and bake for 25 to 30 minutes.
- For the glaze, mix the powdered sugar and the grapefruit juice until the desired consistency is reached. Once finished, drizzle the glaze on top of the cake.
- Garnish top of the cake with mint leaves and grapefruit wheels.

You’ll need these:
- 2 cups of white whole-wheat flour
- ½ teaspoon of salt
- 2 teaspoons of baking powder
- ½ cup of vegetable oil
- 1 ½ cup of granulated sugar
- 5 large egg yolks (with whites reserved)
- 1/3 cup of water
- 1-tablespoon grapefruit zest
- ¼ cup of fresh grapefruit juice
- ¼ teaspoon of cream of tartar
- 5 large egg whites
Directions
- Preheat oven to 350 degrees.
- Mix together baking powder, salt, and flour in a bowl and set aside.
- In a separate bowl, combine oil and egg yolks. Beat them at a low speed using a hand mixer. Then, slowly add sugar and once the mixture begins to thicken, add water and grapefruit juice. Beat for about 3 minutes on medium speed.
- Gently add the dry ingredient mixture and grapefruit zest and fold together with a spatula.
- In a separate bowl, beat egg whites until they get a foamy texture. Then, add the cream of tartar and keep beating on high until peaks begin to form.
- Slowly begin to fold the egg white mixture into the batter. Mix only until some traces of white are left. Make sure to not over-mix.
- Pour the finished batter into a baking pan and bake for 20 to 25 minutes.
- After taking out of the oven, set to cool for 10 minutes before taking out of the pan to cool off completely.
- Frost the cake.
