Grapefruit Cake

Go big or go home, right? Let’s start this list off the right way: with a grapefruit cake that’s to die for! This cake uses grapefruit zest and freshly squeezed grapefruit juice to make a truly delicious dish!

The Ingredients

  • 1 fresh Rio red grapefruit
  • 2 large eggs
  • 3 cups sifted cake flour
  • 1 ¾ cups of white sugar
  • ⅔ cup of softened butter
  • ¾ cup of milk
  • 2 ½ teaspoons of baking powder
  • 1 ½ teaspoons of vanilla extract
  • ½ teaspoon of salt

Baking Your Grapefruit Cake

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Prep two 9-inch pans with grease and flour.
  3. Zest your grapefruit, measuring out 1 teaspoon of zest.
  4. Cut your grapefruit in half and juice each half, measuring out about ½ cup of juice.
  5. In a medium bowl, sift together the salt, baking powder, and flour. Set aside.
  6. In a large bowl, cream together your butter and sugar until fluffy and light.
  7. Beat your eggs into the butter mixture one at a time. Mix well after adding each egg.
  8. Stir your vanilla and zest into the butter mixture.
  9. Slowly add in your flour mixture, milk, and grapefruit juice, alternating between each and beating after each new addition.
  10. Pour your cake batter into the greased and floured pans.
  11. Bake for 25 to 30 minutes, or until you can insert a toothpick into the center of the cake and pull it out clean.
  12. Let your cakes cool in their pans for 10 minutes before cooling on a wire rack.
  13. Ice as preferred.

Grapefruit Bars

Next, we’re going to take things a little easier with some yummy grapefruit bars. This tasty recipe is a lot more laid back—the crust only has four ingredients! We know you can handle it!

The Crust Ingredients

  • 1 cup of all-purpose flour
  • ½ cup of sugar
  • ½ cup of room-temperature butter
  • ⅛ teaspoon of salt

The Filling Ingredients

  • 1 fresh Rio red grapefruit
  • 2 large eggs
  • ¾ cup of sugar
  • 3 tablespoons of all-purpose flour
  • Powdered sugar

Baking Your Grapefruit Crust

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Layer two pieces of baking parchment over the bottom of an 8×8 pan with each layer of paper covering the bottom and two opposite sides, laid in opposing directions. The entire inside of the pan should be lined.
  3. In a medium bowl, beat together the sugar and butter until light and fluffy, scraping the sides as needed.
  4. Mixing slowly, add the flour and salt.
  5. Press the dough crust into the bottom of the pan, making an even layer.
  6. Bake your dough for 15 to 18 minutes or until lightly browned.

Making Your Grapefruit Bars

  1. Fully zest your grapefruit.
  2. Cut your grapefruit in half, and juice each half, measuring out ¼ cup of juice.
  3. In a medium bowl, whisk together the eggs and sugar until slightly thick.
  4. Whisk in the flour, zest, and grapefruit juice.
  5. Pour your filling mixture over your freshly baked crust
  6. Bake your bars for about 18 to 20 minutes, or until the center is no longer jiggly.
  7. Allow your bars to cool completely.
  8. Use the parchment paper to lift out the entire bar and place on a cutting board.
  9. Cut your bar into 16 individual grapefruit bars.
