Ingredients:
- 2 large Ruby red grapefruits
- 5 cups of sugar
- 3 cups of water
- Good-quality dark chocolate for dipping
Directions:
- Make sure your grapefruit peels are washed and dried. Slice them into 1 ½ inch strips.

- Drain the peels and rinse with cool water.
- Bring three cups of water and three cups of sugar to a boil in a medium saucepan. Stir until the sugar is dissolved, and then add the sliced peels. Reduce the heat to medium-low and simmer for one hour.
- Line a large baking sheet with parchment paper and set aside.
- Drain the grapefruit peels and toss in two cups of sugar.
- Transfer the peels to the parchment-lined sheet and allow it to sit at room temperature, uncovered, for one to three days.
- Once the candied peels have dried, you can now dip them in chocolate! Melt the chocolate in a microwave-safe bowl, stirring every 15 to 30 seconds to prevent it from burning.
