What You’ll Need:
- 12 of your favorite yeast rolls
- 12 slices of deli ham
- 2 avocados, thinly sliced
- 2 grapefruits, peeled and sectioned
- Spring mix lettuce
- ¼ cup spicy brown mustard
Making Sandwiches:
- Slice the rolls horizontally and set the top part aside for a later step. Evenly spread the brown mustard on the bottom part.

- 1 cup sugar

- 2 egg yolks
- ¼ cup red grapefruit juice, freshly-squeezed
Filling Ingredients:
- ½ cup soft butter
- 2 ¾ cups powdered sugar
- 1 Texas grapefruit, zested
- 3 tablespoons red grapefruit juice, freshly-squeezed
- pink gel food coloring, optional
Ready, Set, Bake:
- Combine the flour, baking powder, and salt in a large bowl and set aside.
- Add sugar and grapefruit zest in a stand mixer. Use your fingers to mix the zest and grapefruit until there are no clumps.
- Use a paddle attachment to cream the butter and sugar mixture until light and fluffy.
- Add in the egg yolks.
- On a low speed, alternate adding in a little bit of the flour mixture followed by grapefruit juice until all is combined.
- Pat the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 350 degrees Fahrenheit.
- Roll out the dough onto a floured countertop.
