Grapefruit + Coconut Breakfast Grain Bowl
Ingredients
- ½ cup grapefruit juice,
- 1.5 cups coconut milk, plus more for serving,
- 1 cup white quinoa,
- ¼ cup coconut flakes,
- Maple syrup or coconut sugar to taste,
- Grapefruit, nuts and/or granola for topping,
Directions
Bring coconut milk, grapefruit juice and quinoa to a boil in a saucepan. Reduce heat to low and cover, cooking for 15 minutes until most of the liquid is absorbed. Divide into bowls and add additional coconut milk for a porridge-like consistency. Sweeten to taste and top with desired toppings.
