Beet, Goat Cheese, Arugula & Grapefruit Salad
Ingredients
- 5-6 beets (steamed and quartered),
- 4 oz. goat Cheese, crumbled,
- 5 oz. arugula,
- 1 large grapefruit (segmented),
- ½ Tb. olive oil,
- Juice of 1 lemon,
- Salt and pepper to taste,
- Honey (for drizzling).
Directions
Dress arugula with olive oil, lemon juice, salt and pepper. Add beets, goat cheese, and grapefruit. Sprinkle with a bit more salt and pepper, drizzle with honey and serve.
