Salad Ingredients:
- 4 cups of mixed greens, spinach, or leaf lettuce
- 1 large red grapefruit, peeled and segmented
- 1 avocado, peeled, pitted, and chopped
- ¼ cup almonds, chopped
Salad Dressing Ingredients:
- 3 tablespoons olive oil
- 1 tablespoon champagne vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Start Tossing:
- Toss the salad ingredients in a large bowl.

Ingredients You’ll Need:
- 1 pound jumbo shrimp
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon cayenne pepper
- 2 Texas red grapefruits, peeled and segmented
Heat the Grill:
- Combine the spices in a small bowl and set aside.

The Grapefruit Marinade:
- 2 tablespoons olive oil
- 1 teaspoon grated ginger
- 1 tablespoon brown sugar
- ½ tablespoon rice vinegar
- ½ of red grapefruit, juiced
- 1 garlic clove, minced
- 1 tablespoon green onion, chopped
The Creamy Cilantro Dressing:
- ½ cup mayo
- ¼ cup cilantro
- ¼ of poblano pepper, seeds removed
- 1 lime, juiced
- 1 teaspoon white wine vinegar
- 1 garlic clove, minced
- 1 pinch of cayenne pepper
The Steak:
- 16 to 20 oz flank steak, or your favorite cut
The Instructions:
- Mix the grapefruit marinade and pour it into a large plastic bag along with the flank steak. Seal the bag and set it in the fridge for at least four hours or overnight.
- Heat a cast iron pan, grill pan, or grill. Do not use any oil! When the pan is very hot, place the marinated steak in the pan. Cook until the meat reaches your desired temperature.
- Let it sit on a cutting board for 8 minutes before serving.
- Blend the cilantro dressing ingredients in a blender and serve with the steak.
Course Four: Red Grapefruit Pavlovas!

Your Ingredient List:
- 1 tablespoon cornstarch
- ¾ cup granulated sugar
- 3 large egg whites
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- Red food coloring (optional)
- 3 Texas red grapefruits, peeled, segmented, and chopped
- 1 tablespoon fresh-squeezed grapefruit juice
- 2 tablespoons strawberry jam
- 1 ½ cups heavy cream
- 1 cup plain Greek yogurt
- 3 tablespoons powdered sugar
Your Baking Steps:
- Preheat your oven to 250 degrees Fahrenheit, and line a large baking sheet with parchment paper.
- Mix cornstarch and ¼ cup granulated sugar in a small bowl.
- Beat the egg whites in a large bowl with an electric beater until soft peaks form. Add 1⁄2 cup granulated sugar — one tablespoon at a time — beating well between each addition. Slowly add the cornstarch mixture and beat on high until the whites are stiff and glossy. This should take about 2 minutes. Add in vanilla, vinegar, and food coloring.
- Spoon ⅓ cup of the meringue into eight mounds onto the prepared baking sheets. Spread each mound into three-inch disks. With the back of a spoon, press the center to make a deep indent.
- Bake the meringue until it’s dry and forms a crust–about 30 to 40 minutes.
- Do not open the door when the meringues are done. Turn off the oven and let them cool inside the oven for one hour.
- Meanwhile, whisk the jam and grapefruit juice and add the grapefruit segments.
- Beat the heavy cream, yogurt, and powdered sugar in a large bowl with an electric mixer until stiff peaks form.
- Serve the meringue filled with the cream mixture and topped with fruit!
