Our Two Favorite Grapefruit Cocktails for Spring and Summer

Spring is in full swing, and summer is right around the corner. Here in Texas, that means it’s time to start enjoying some delicious grapefruit cocktails!

With their zesty and refreshing taste, grapefruits make the perfect cocktail ingredient for spring and summer. Keep reading to learn how to make your own grapefruit Moscow mule or grapefruit bellini!

Grapefruit Moscow Mule

The grapefruit Moscow mule is the first tasty cocktail on our list. This zingy drink combines the spicy taste of ginger with refreshing citrus flavors. This cocktail is sure to please even the pickiest of drinkers! Keep in mind that ginger beer is non-alcoholic: by removing the vodka, you can make this cocktail non-alcoholic, and you’ll still have a delicious drink!

What You’ll Need

  • 1 fresh Rio red grapefruit
  • 1 fresh lime
  • 1 can of ginger beer
  • 2 oz. of vodka

Making Your Grapefruit Moscow Mule

  1. Start by cutting your grapefruit in half. Squeeze the juice from one of the halves, and set the other half aside.
  2. Cut your lime in half and squeeze the juice from both halves.
  3. Combine your lime juice, grapefruit, and vodka in a copper mug or glass filled with ice. 
  4. Top off your glass with ginger beer.
  5. Using the half you set aside, cut a grapefruit wedge for a garnish.

Grapefruit Bellini

While mules are known for their zesty ginger taste, bellinis are a bit more bright and bubbly. This light drink is perfect for brunch or breakfast or save it for a special evening. Once you try it, we’re sure a grapefruit bellini is going to become one of your new favorites! This recipe makes two servings, so you can share with a friend!


  • 1 fresh Rio red grapefruit
  • 1 lemon
  • 1 egg
  • 4 oz of champagne or prosecco
  • 1 oz of simple syrup

Making Your Grapefruit Bellini

  1. Cut your grapefruit in half. Squeeze the juice from both halves, measuring out 4 oz. of juice.
  2. Cut your lemon in half. Squeeze the juice from one half, measuring out ½ oz. of juice.
  3. Separate the egg white and yolk. Discard the yolk.
  4. Combine your juice, simple syrup, and egg whites in a shaker.
  5. Pour two oz. of champagne or prosecco in two champagne glasses.
  6. Pour 2 ½ oz. of juice mixture into each glass.
  7. You can use a spiral of lemon or grapefruit peel for your garnish. To make, remove as much of the white pith as possible from the peel, then cut a thin sliver. Twist the sliver around a straw or utensil handle, and place on the edge of the glass.
