Welcome the warmer weather of May with a refreshing grapefruit drink at your Cinco de Mayo celebration. Rest assured that your guests will be delighted by any of the following grapefruit drinks and party food:

Palo-Marita Drink

  • 2 c. fresh red grapefruit juice
  • 4 Tbsp. agave syrup
  • 1 c. club soda
  • 1 c. fresh lemon juice

Mix together all the ingredients in a pitcher. Line rims of glasses with salt and add ice. Pour juice into each glass, decorate with a wedge of grapefruit, and serve immediately. Makes 4 servings.

Grapefruit Thyme Mocktail

For Grapefruit Thyme simple syrup:

  • 1 cup water
  • 1 cup sugar
  • 4 thyme sprigs
  • 3 grapefruit slices

For Grapefruit Thyme Mocktail:

  • 1 c. fresh grapefruit juice
  • 4 oz. grapefruit thyme syrup
  • Sparkling water

To make syrup:

Combine all ingredients in a medium saucepan and bring to a simmer. Gently simmer until sugar dissolves. Cool completely and strain, using the back of a spoon to release juices from grapefruit slices.

To make mocktail:

Fill four glasses with ice. To each glass, add ¼ c. grapefruit juice and 1 oz. grapefruit thyme syrup. Stir to combine and top with sparkling water. Garnish with thyme sprig and grapefruit slice.

Red Grapefruit Salsa

  • 2 large red grapefruits (about 1 pound each)
  • 1 medium tomato, finely diced
  • 1 c. diced red and yellow bell pepper
  • 1 jalapeno pepper, minced
  • ½ c. finely chopped red onion
  • 2 tbsp. lime juice
  • ½ tsp. salt
  • 2 tbsp. fresh, chopped cilantro

Using a sharp knife, slice the top and bottom off each grapefruit. Remove the peel and white pith, following the curve of the fruit with your knife. Cut out the flesh from each section, being sure to remove the membrane, and cut into small chunks. Combine prepared grapefruit with remaining ingredients in a medium bowl and serve immediately.
