Red Grapefruit Salsa

  • 2 large red grapefruits (about 1 pound each)
  • 1 medium tomato, finely diced
  • 1 c. diced red and yellow bell pepper
  • 1 jalapeno pepper, minced
  • ½ c. finely chopped red onion
  • 2 tbsp. lime juice
  • ½ tsp. salt
  • 2 tbsp. fresh, chopped cilantro

Using a sharp knife, slice the top and bottom off each grapefruit. Remove the peel and white pith, following the curve of the fruit with your knife.
