First up, the crust:

5 ounces butter crackers, around 40 pieces, crushed

3 tablespoons sugar

⅓ cup powdered milk

1 ½ teaspoon salt

½ cup melted butter, unsalted

Next, the grapefruit curd:

¼ cup cornstarch

1 ½ cups sugar

½ teaspoon salt

1 ¾ cup Rio red grapefruit juice

¼ cup lime juice

4 large egg yolks

6 tablespoons butter, unsalted

1 teaspoon Rio red grapefruit zest

3 to 5 drops of pink food coloring, optional

Whipped cream for serving

What to do next:

  1. Preheat the oven to 275 degrees Fahrenheit.
  2. Combine crackers, milk, sugar, and salt in a large bowl. Stir in the melted butter.
  3. Press the mixture on the bottom, sides, and rim of a 9-inch pie plate. 
  4. Bake the crust until lightly toasted, about 20 minutes. 
  5. Let the crust cool while making the grapefruit curd.
  6. Combine the sugar, cornstarch, and salt in a medium saucepan. Whisk in juices and egg yolks.
  7. Bring to a light boil over medium-high heat, constantly whisking until thickened. 
  8. Remove from heat, and add the butter, zest, and food coloring. 
  9. Pour into the cooled crust and chill for 4 hours or overnight.

For the crust:

1 cup all-purpose flour

¼ cup powdered sugar

¼ tsp salt

½ cup butter, room temperature and cubed

Grab these for the grapefruit filling:

1 ½ cups sugar

¼ cup all-purpose flour

4 large eggs

1 tablespoon red grapefruit zest

1 cup red grapefruit juice

Follow these steps:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Line an 11×7 baking pan with parchment paper.
  3. Combine crust ingredients in a food processor or stand mixer. Pulse or mix until it starts clumping together. 
  4. Press the mixture onto the bottom of the pan, and bake for 18 to 20 minutes, or until golden brown.
  5. For the filling, whisk together the sugar and flour in a large bowl. 
  6. Add eggs one at a time, whisking well after each one. Then add the grapefruit zest and juice. 
  7. Pour the filling mixture over the crust, and bake for another 20 minutes, or until set.
  8. While it may be tempting to dive right in, let it cool completely for one hour, and then refrigerate for one to two hours before serving.

½ cup coconut flour

¼ teaspoon salt

½ teaspoon ground ginger

2 tablespoons honey

¼ cup coconut oil, softened

1 teaspoon gelatin

2 tablespoons cold water

¾ cup Rio red grapefruit juice

¼ cup lemon juice

⅓ cup honey

2 eggs and 2 egg yolks

6 tablespoons ghee or coconut oil, or a combination

3 to 4 grapefruits, cut into segments

How to make:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease a 9-inch tart pan with coconut oil.
  3. Combine flour, ginger, and salt in a large bowl. Add the honey and coconut oil until blended.
  4. Press the dough onto the pan. Prick all over the dough with a fork to prevent air bubbles.
  5. Bake for 5 to 7 minutes, or until light brown. Cool completely.
  6. In a small bowl, combine gelatin and water, and set it aside.
  7. In a small saucepan, whisk juices, honey, and eggs together over medium-low heat. Cook, whisking continually, until thick, about 10 minutes. Add in ghee or coconut oil, and remove from heat. 
  8. Microwave the gelatin mixture for 10 seconds and add it to the filling. 
  9. Pour mixture through a mesh sieve to remove any lumps.
  10. Let the filling cool a little before pouring it onto the baked crust. 
  11. Refrigerate for at least one hour.
  12. Dry grapefruit segments by dabbing them with a paper towel, and arrange as desired on top of the tart.
