Christmas Grapefruit Cake Recipes
1. Grapefruit Pound Cake
Total Time: 2 hrs.
Serves: 16
What You’ll Need:
- Baking spray with flour
- 2 cups of all-purpose flour
- 1 tsp – baking powder
- ⅝ tsp – salt, divided
- 1 ⅔ cups – granulated sugar
- 6 tbsp – butter, softened
- 6 oz – ⅓-less-fat cream cheese
- 2 – large eggs
- ¼ cup – canola oil
- 2 tbsp – grated Winter Sweetz grapefruit rind
- ½ tsp – vanilla extract
- ½ cup – 2% milk
- ½ cup – fresh Winter Sweetz grapefruit juice
- 1 ¼ cups – powdered sugar
How It’s Done:
Step 1
- Preheat oven to 325o F.
Step 2
- Coat a 10-inch tube pan with baking spray.
- In a bowl, mix the flour, baking powder, and ½ tsp of salt. Stir well.
- In another large bowl, place the granulated sugar, butter, and cream cheese. Beat with a mixer at high-speed. Mix until fluffy.
- Continue beating, adding eggs, one at a time. Then beat in oil, rind, and vanilla.
Step 3
- Add flour mixture and milk into the batter, alternating between the two.
- Make sure to start and end with flour.
- Spoon batter into the coated pan. Bake at 325o for 1 hour and 10 minutes or until toothpick comes out with moist crumbs when stuck into the cake.
- Cool in pan on a wire rack for 10 minutes.
- Invert cake and continue to cool on the rack.
Step 4
- Bring the grapefruit juice to a boil in a saucepan over medium-high heat.
- Cook until reduced to 3 tbsp (about 4 minutes).
- Cool slightly, just enough for it to thicken.
- Stir in powdered sugar and left over salt.
- Finally, drizzle this over the cake.
2. Fresh Grapefruit Cake
Total time: 1 hr 55 min
Serves: 12
What You’ll Need:
- ⅔ cup – butter, softened
- 1 ¾ cups – white sugar
- 2 – eggs
- 1 ½ tsp – vanilla extract
- 1 tsp – grated Winter Sweetz grapefruit zest
- ½ cup – fresh Winter Sweetz grapefruit juice
- ¾ cup – whole or 2% milk
- 3 cups – sifted cake flour
- 2 ½ tsp – baking powder
- ½ tsp – salt
How It’s Done:
Step 1
- Preheat oven to 350o F.
- Grease and flour two 9-inch pans.
Step 2
- In a medium bowl, sift flour, salt, and baking powder together.
Step 3
- In a large bowl, beat together the butter and sugar until light and fluffy.
- Then, beat in the eggs, one at a time.
- Next, stir in the vanilla and grapefruit zest.
- Beat in the flour mixture, alternating with the milk and grapefruit juice.
- Pour batter evenly into the greased pans.
Step 4
- Bake in preheated oven for 25 to 30 minutes or until toothpick comes out clean when stuck into the cake.
- Let cool in pan for 10 minutes, then invert the cake onto a wire rack and allow it to cool down.
3. Grapefruit Cake with Grapefruit Cream Cheese Frosting
Total time: 45 min
Serves: 8
What You’ll Need:
- 1½ cups – cake flour, sifted
- ¾ cup – white sugar
- 1 ½ tsp – baking powder
- ½ tsp – salt
- ¼ cup – water
- ¼ cup – vegetable oil
- ½ tsp – Winter Sweetz grapefruit zest
- 3 tbsp – Winter Sweetz grapefruit juice
- 3 – egg yolks
- 3 – egg whites
- ¼ tsp – cream of tartar
What You’ll Need for the Frosting:
- 6 oz – cream cheese
- 2 tsp – Winter Sweetz grapefruit juice
- 1 tsp – Winter Sweetz grapefruit zest
- ¾ cup – powdered sugar, sifted
- 6 to 8 drops – yellow food coloring
- 1 lb – grapefruit sections, drained
How It’s Done:
Step 1
- Preheat oven to 350o F.
- Line 9-inch cake pan with wax paper and coat with non-stick oil spray.
Step 2
- Sift together salt, sugar, flour and baking powder into a bowl.
- With your hands, dig a hole in the middle of the flour mix for the rest of the ingredients.
- Add water, oil, zest, juice, and yolks.
- Beat until a smooth texture is obtained.
- In another bowl, beat egg whites and cream of tartar. Beat until whites are stiff but moist.
- Carefully, gradually fold egg whites into batter with a rubber spatula until blended. Do not stir.
Step 3
- Pour batter into cake pan.
Step 4
- Bake for 25 minutes until cake bounces back when lightly pressed.
- Invert cake onto rack to cool. Run a rubber spatula around the edges of the cake to ensure it is not stuck.
- Remove cake from pan, carefully. With a serrated knife, cut the cake in half horizontally, into two 4.5-inch layers.
Step 5 (Cream Cheese Frosting)
- Allow cream cheese to soften at room temperature.
- Beat cheese until fluffy texture. Then add juice and zest.
- Slowly, blend in the sugar. Mix until well blended, then add food coloring.
- Next, crush some of the grapefruit section to reach 2 tsp. Blend into the frosting.
Step 6
- Spread the frosting all over the bottom half of the cake, top it with fresh Winter Sweetz grapefruit sections.
- Cover bottom half with the top half and continue spreading the frosting on the top and sides. Finally, decorate the second half with more grapefruit sections or peeled Winter Sweetz grapefruit slices.
